De Haan Altés Benufet Organic (Wit)
The old vineyard of white garnacha at high altitude gives us a wine of a high concentration and an exceptional finess.
The nose plays between the white fruit in bloom and the ripe white fruit, with the fair strokes of the wood, well integrated. Wide texture and enveloping, fleshy but fresh, lively acidity, long and deep. A very gastronomic target.
ELABORATION
Manual harvest in 18 kg boxes with careful selection in the field and later also in the cellar. Cooling of the grape at 3-5ºC for about 24 hours. Direct pressing with whole bunches followed by controlled oxidation of the must to limit the extraction of polyphenols. Spontaneous fermentation with wild yeast in concrete tanks. Aging with regular bâtonnages of the fine lees in the same concrete tanks (but 12% that are in an Austrian oak foudre of 2500L) for about 5 months in order to improve the sensations in the mouth.
Light clarification and filtration before bottling.

The sweetness of the garnacha and the strength of syrah are combined to draw a wine full of red and black fruit, such as blackberries and plums. Balance and harmony in the mouth, with a good concentration and measured texture. Fruit tannin, ripe and kind. Very juicy.
ELABORATION
Manual harvest of the varieties separately with careful selection in the field. Each variety is made separately but following the same guidelines: partial destemming and crushing prior to vatting with cold pre-maceration. Spontaneous fermentation with wild yeasts accompanied by daily pigeages. FML and aging in Austrian oak barrels for 6 months. The separate wines are then blended before bottling.
